Great Question! We’re making the bread and pastries we want to see in the world and eat.

once upon a time…

Little Spruce Baking Co was started by Former Pastry Chef of Big Tree Hospitality, Kim Rodgers and Alison Parsons (her trusty sous) as a scheme to get people to buy croissants at Brunch at Eventide. Unfortunately, it didn’t work as most visitors to Eventide are there exclusively for the Brown Butter Lobster Roll TM or to take pics of oysters and post them on Instagram #mainevibes

 

Always eager for an opportunity to heap more work on their full plates, Kim and Alison, figured there was a market for croissants outside of Eventide and started wholesaling to cafes and bakeries around Biddeford, coming in before their regular pastry chef shifts to make, bake, and deliver. Then they added the missing puzzle piece, Justin Flakne, a talented bread baker to the company to fufill bread needs (kneads). Then continued to grow!!!!! When the pandemic hit a lot of things changed. Kim left the company to make more time for herself, her cat Broccoli, and her garden. Alison and Justin decided to continue on, with Alison taking charge on croissants and Justin taking charge on bread.

 

In the spring of 2020 the owners of Big Tree Hospitality were given the opportunity to run The Higgins Beach Market, they sat Alison and Justin down and asked if they’d like to do Little Spruce full time and provide their bread and pastries to the Market. They obviously said yes and moved out of the Big Tree Hospitality Commissary down the hall to the former Night Moves Bread and Pies space and the rest is history! Now you can find Little Spruce Breads and Pastries all over Southern Maine!

Justin’s speciality is bread. He can make it (and bake it) all! from Philly style hoagies to hearty dark rye loaves. When he’s not making bread he’s probably in his garden, moving wood from one place to another or spending time with his family.

Alison Parsons

OWNER/FOUNDER

Alison has been baking professionally for over 10 years. Her specialties are laminated doughs, croissants, and puns. She’s a graduate of the now defunct New England Culinary Institute.  When she’s not making croissants or emailing, she’s probably taking a nap or attempting to catch up on all the podcasts she subscribes to.
